Aged in American oak, the 2016 Cabernet Sauvignon Bin 707 stands out for its bold aromas of vanilla, tobacco and cassis. This year, it's close to 40% each from Coonawarra and McLaren Vale, with smaller proportions from Barossa Valley and the Adelaide Hills. It's full-bodied and rich, with a velvety mouthfeel, great intensity and super length. Yes, it's embryonic, but it's not unapproachable, much like any other high-quality New World Cabernet these days, with the ability to age for two decades or more.
The scents of Indian ink and vivid, new American oak take center stage, followed by redcurrant, blackcurrant and meaty aromas, as well as a sanguine, iodine edge. The palate confirms the sense that this needs a good rest. Deep and dense, the attractively chewy tannins are draped in rich, ripe blackberry and blackcurrant flavors. This is a vibrant wine, with significant tannin layering that needs to rest a little. Coonawarra, McLaren Vale, Barossa Valley, Adelaide Hills fruit sourcing. 20 months in new American-oak hogsheads. Try from 2024. Should peak after 2030.
Distinctive and rich, this shows off flashy vanilla, milk chocolate and cream soda notes up front, but then sinks into a groove of plump blackberry and black cherry flavors, revealing dashes of black pepper and cigar box. The tannins are dense yet polished. Presents plenty of harmony on the finish, with a vanilla bean hint weaving in and out.
39% Coonawarra, 38% McLaren Vale, 14% Barossa Valley, 9% Adelaide Hills. After a hot beginning, the welcome milder ‘Indian summer’ conditions leading into harvest across South Australia ensured even ripeness and optimal flavour. 20 months in new American oak hogsheads. TA 6.8 g/l, pH 3.69. Very dark purple. Round and voluptuous. Round and rich and vibrant. Sage note. Interesting and appetising. 17.5/20 points. (JR)
Squid ink blackness. A brooding dark amalgam of black pudding, sweetbreads and marrow. A brisk swirl of the glass reveals scents of nori, oyster/blackbean sauce and iodine. A concession of varietal alignment – cabernet florals, blackcurrant and black mulberry. Complexingly, a suggestion of beurre noisette sauce – avec sage. Expansive. Even. Expressive. Engaging. Enigmatic. Svelte tannins. Be warned – senses led astray – ambushed by tannins, seduced by generosity and power, waylaid by luxurious fruits and balance. Innocence lost.
